Ingredients
8 Large eggs
1½ cups Cottage cheese (full-fat or low-fat)
1 cup Shredded cheese (cheddar or mozzarella)
2 cups Baby spinach, chopped
1 cup Cherry tomatoes, halved
3 Green onions, sliced
½ teaspoon Garlic powder
½ teaspoon Salt
¼ teaspoon Black pepper
1 teaspoon Olive oil (for greasing)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil
- In a large mixing bowl, crack all 8 eggs and whisk them thoroughly
- Add the cottage cheese to the whisked eggs and stir gently
- Fold in the shredded cheese, chopped spinach, halved cherry tomatoes, and sliced green onions. Add garlic powder, salt, and pepper
- Pour the mixture into your prepared baking dish and spread it evenly
- Bake for 25-30 minutes until the center is set and the edges turn golden brow
- Let the dish rest for 5 minutes before slicing into squares and serving warm
