A comforting and hearty dish featuring white sweet potatoes and savory sausages glazed with a sticky honey garlic sauce, perfect for busy families.
Ingredients
2 pounds White sweet potatoes, peeled and cubed
1.5 pounds Italian sausages
1/3 cup Honey
6 cloves Garlic, minced
3 tablespoons Soy sauce
2 tablespoons Olive oil
1 tablespoon Apple cider vinegar
1/2 teaspoon Red pepper flakes (optional)
2 sprigs Fresh thyme
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F. Line a large baking sheet with parchment paper or lightly grease it
- Cube your white sweet potatoes into 1-inch pieces. Toss them with 1 tablespoon of olive oil, salt, and pepper
- Arrange the white sweet potatoes on your prepared baking sheet. Nestle the sausages among the potatoes
- In a small bowl, whisk together honey, minced garlic, soy sauce, remaining olive oil, apple cider vinegar, and red pepper flakes if using
- Brush half of the honey garlic mixture over the sausages and sweet potatoes. Tuck in your fresh thyme sprigs
- Roast for 20 minutes. Then, flip the sausages and stir the potatoes. Brush with the remaining honey garlic glaze. Continue roasting for another 15-20 minutes until the sweet potatoes are fork-tender and the sausages reach an internal temperature of 160°F
- For extra caramelization, broil for 2-3 minutes at the end. Watch carefully to prevent burning
- Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving
