  1. Preheat your oven to 400°F. Line two baking sheets with parchment paper
  2. Wash and dry the sweet potatoes thoroughly. Slice them into rounds about ½-inch thick
  3. Arrange the sweet potato rounds on your prepared baking sheets in a single layer. Brush both sides with olive oil, then sprinkle with salt and pepper
  4. Roast for 25-30 minutes, flipping halfway through
  5. While the sweet potatoes roast, prepare your toppings. Sauté fresh cranberries with honey until they begin to pop and toast pecans in a dry skillet
  6. Remove the sweet potato rounds from the oven and let them cool for 5 minutes
  7. Top each round with goat cheese, cranberries, pecans, honey, and fresh herbs. Arrange on a serving platter

Notes

These bites can be made ahead of time and stored in the refrigerator for up to two days.

For a vegan version, replace cheese with hummus and honey with maple syrup.
