Description

This street corn chicken casserole creamy dinner captures all the magic of Mexican street corn—the smokiness, the tang, the creamy richness—and transforms it into a hearty, family-friendly casserole. It's flavorful, creamy, and comes together quickly, making it a perfect weeknight meal.


Ingredients

3 cups Cooked chicken breast, shredded
4 cups Frozen corn kernels
8 ounces Cream cheese, softened
1 cup Sour cream
½ cup Mayonnaise
1 cup Cotija cheese, crumbled
2 cups Shredded Mexican blend cheese, divided
1 can (4 ounces) Diced green chiles
1 tablespoon Chili powder
1 teaspoon Smoked paprika
1 teaspoon Cumi
1 teaspoon Garlic powder
2 tablespoons Fresh lime juice
¼ cup Fresh cilantro, chopped
Salt and pepper to taste


Instructions

  1. Step 1: Preheat your oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or butter
  2. Step 2: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and well-blended
  3. Step 3: Add the chili powder, smoked paprika, cumin, garlic powder, lime juice, salt, and pepper to the cream cheese mixture. Stir thoroughly
  4. Step 4: Fold in the shredded chicken, corn kernels, green chiles, cotija cheese, cilantro, and 1 cup of the Mexican blend cheese. Mix until all ingredients are coated
  5. Step 5: Transfer the mixture to your prepared baking dish and spread it evenly
  6. Step 6: Sprinkle the remaining 1 cup of Mexican blend cheese over the top
  7. Step 7: Bake for 25-30 minutes until hot throughout and the cheese is melted and slightly golde
  8. Step 8: Remove from the oven and let it rest for 5 minutes
  9. Step 9: Garnish with extra cilantro, lime juice, and additional cotija cheese if desired. Serve hot

Notes

For a lighter version, use Greek yogurt instead of sour cream and light cream cheese.
