Description

This strawberry mango sago creamy tropical dessert is a refreshing treat made with juicy tropical fruits, creamy coconut milk, and chewy tapioca pearls. It's perfect for warm summer evenings and is naturally dairy-free, making it suitable for guests with dietary restrictions.


Ingredients

1 cup Small pearl sago (tapioca pearls)
2 cups Fresh strawberries, hulled and diced
3 cups Fresh mango, peeled and diced (about 2 large mangoes)
1 can (14 oz) Coconut milk (full-fat for creaminess)
1/2 cup Sweetened condensed milk
1 cup Evaporated milk
1/4 cup Sugar (adjust to taste)
6 cups Water for cooking sago
2 cups Ice cubes


Instructions

  1. Bring 6 cups of water to a rolling boil in a large pot. Add the sago pearls slowly while stirring constantly. Reduce heat to medium and cook for about 10-15 minutes, stirring occasionally
  2. Prepare an ice bath in a large bowl. Once the sago pearls turn mostly translucent with just a tiny white dot in the center, drain them immediately and transfer to the ice bath. Let them cool completely, then drain well
  3. Dice the strawberries and mangoes. In a large mixing bowl, combine the coconut milk, evaporated milk, and sweetened condensed milk. Stir until smooth and creamy
  4. Add sugar to taste, then fold in the cooled sago pearls gently. Add most of your diced strawberries and mangoes, saving some for topping. Mix everything together carefully
  5. Refrigerate the mixture for at least 2 hours before serving. When ready to serve, give it a good stir, spoon into individual serving glasses or bowls, and top with reserved fresh fruit and a few ice cubes if desired

Notes

Don't overcook the sago pearls; they should be translucent but still have a slight chew.

Use ripe fruits for maximum sweetness.

Adjust sweetness gradually, tasting as you go.
