The vibrant chimichurri sauce, made with fresh herbs, garlic, and tangy vinegar, transforms a simple steak dinner into a special occasion.

Ingredients

Scale

1.52 pounds Steak (ribeye, sirloin, or flank)
1 cup Fresh parsley, finely chopped
2 tablespoons Fresh oregano, chopped
45 Garlic cloves, minced
1/4 cup Red wine vinegar
1/2 cup Extra virgin olive oil
1/2 teaspoon Red pepper flakes
1 teaspoon Salt
1/2 teaspoon Black pepper
2 tablespoons Fresh lemon juice

Instructions

  1. Step 1: Prepare the chimichurri sauce by combining chopped parsley, oregano, and minced garlic in a medium bowl
  2. Step 2: Add red wine vinegar, lemon juice, red pepper flakes, salt, and black pepper. Stir thoroughly
  3. Step 3: Slowly pour in olive oil while whisking constantly to create an emulsion. Let sit at room temperature for at least 30 minutes
  4. Step 4: Remove steak from the refrigerator and let it sit at room temperature for 20-30 minutes
  5. Step 5: Pat the steak dry with paper towels and season both sides generously with salt and pepper
  6. Step 6: Heat a cast-iron skillet or grill pan over high heat until smoking hot
  7. Step 7: Add a tablespoon of oil to the pan and place the steak in the hot pan. Cook for 4-5 minutes without moving it
  8. Step 8: Flip the steak and cook for another 3-4 minutes for medium-rare, adjusting timing based on preferred doneness
  9. Step 9: Remove the steak from heat and let it rest on a cutting board for 10 minutes
  10. Step 10: Slice the steak against the grain into thin strips and drizzle with chimichurri sauce before serving

Notes

Use fresh herbs for the best flavor.

Let the chimichurri sit for at least an hour for improved flavor.
