Ingredients
2½ cups All-purpose flour
2 teaspoons Baking powder
1 teaspoon Baking soda
½ teaspoon Salt
2 teaspoons Ground cinnamo
½ teaspoon Ground nutmeg
½ teaspoon Ground ginger
¼ teaspoon Ground cloves
1½ cups Granulated sugar
½ cup Light brown sugar
1 cup Vegetable oil
4 Large eggs
15 oz can Pure pumpkin puree
1 teaspoon Vanilla extract
16 oz Cream cheese, softened
½ cup Unsalted butter, softened
4 cups Powdered sugar
2 teaspoons Vanilla extract
2 tablespoons Heavy cream
Instructions
- Step 1: Preheat your oven to 350°F. Grease two 9-inch round cake pans thoroughly and line the bottoms with parchment paper
- Step 2: Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves in a large bowl. Set aside
- Step 3: In another bowl, combine both sugars, oil, and eggs. Whisk until smooth and slightly lighter in color
- Step 4: Add pumpkin puree and vanilla to the wet ingredients and stir until combined
- Step 5: Pour the wet ingredients into the dry ingredients and fold gently until just combined
- Step 6: Divide batter evenly between prepared pans and smooth the tops
- Step 7: Bake for 30-35 minutes or until a toothpick comes out clea
- Step 8: Cool cakes in pans for 15 minutes, then turn out onto wire racks to cool completely
- Step 9: Make the cream cheese frosting by beating softened cream cheese and butter until fluffy
- Step 10: Gradually add powdered sugar, then add vanilla and heavy cream, beating until light and spreadable
- Step 11: Place one cake layer on a serving plate, spread frosting on top, add the second layer, and frost the top and sides
- Step 12: Decorate as desired and let the cake set for 30 minutes before slicing
