1 cup Granulated sugar
1/2 cup Brown sugar, packed

15 oz Pumpkin puree
14 oz Sweetened condensed milk
2 large Eggs
2 teaspoons Pumpkin pie spice
1 teaspoon Ground cinnamo
1/2 teaspoon Salt
1 teaspoon Vanilla extract


Instructions

  1. Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides
  2. Combine 2 1/2 cups flour, granulated sugar, brown sugar, and salt in a large bowl. Cut cold butter into small cubes and work it into the flour mixture until it resembles coarse crumbs
  3. Reserve 1 1/2 cups of this mixture for the topping. Press the remaining mixture firmly into the bottom of your prepared pa
  4. Bake the crust for 15 minutes until it just begins to set
  5. Meanwhile, whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, cinnamon, and vanilla extract until smooth
  6. Pour the pumpkin mixture over the warm crust and spread it evenly
  7. Add the remaining 1/2 cup flour to your reserved crumble mixture, toss to combine, then sprinkle this topping evenly over the pumpkin layer
  8. Return the pan to the oven and bake for 40-45 minutes until the pumpkin filling sets and the topping turns golden brow
  9. Cool completely in the pan on a wire rack for about 2 hours
  10. Use the parchment overhang to lift the bars from the pan and cut into 16 squares

Notes

Always use pure pumpkin puree, not pumpkin pie filling.

Keep your butter cold for the best crumble texture.
