Ingredients

1.5 pounds Yukon Gold potatoes, diced
12 ounces Smoked sausage or kielbasa, sliced
2 medium Bell peppers, chopped
1 large Onion, diced
3 tablespoons Olive oil
3 cloves Garlic, minced
1 teaspoon Paprika
1 teaspoon Italian seasoning
1 teaspoon Salt
½ teaspoon Black pepper
¼ cup Fresh parsley, chopped


Instructions

  1. Step 1: Prep your ingredients first. Dice the potatoes into half-inch cubes for even cooking. Slice the sausage into rounds. Chop the peppers and onion. Mince the garlic
  2. Step 2: Heat a large 12-inch skillet over medium-high heat. Add two tablespoons of olive oil. Let it shimmer
  3. Step 3: Add the diced potatoes to the hot skillet. Spread them in an even layer. Season with salt and pepper. Let them cook undisturbed for 5-6 minutes
  4. Step 4: Flip the potatoes and add the remaining tablespoon of olive oil. Toss in the sliced sausage. Cook for another 5 minutes, stirring occasionally
  5. Step 5: Add the onions and bell peppers to the skillet. Stir everything together. Cook for 4-5 minutes until the vegetables softe
  6. Step 6: Push everything to the sides of the skillet, creating a well in the center. Add the minced garlic, paprika, and Italian seasoning to the well. Let them toast for 30 seconds. Then mix everything together
  7. Step 7: Continue cooking for 2-3 more minutes, stirring occasionally. The potatoes should be fork-tender and golde
  8. Step 8: Remove from heat. Sprinkle with fresh parsley. Serve immediately

Notes

Cut your potatoes uniformly for even cooking.

Don't overcrowd the skillet to avoid steaming.

Use a cast iron skillet for better browning.
