12 cups Plain popped popcor
4 cups Mini marshmallows
½ cup Unsalted butter
1½ cups M&Ms or similar candies
1 cup Mini chocolate chips
1 teaspoon Vanilla extract
¼ teaspoon Salt
Cooking spray for greasing
Instructions
- Prepare your pan by spraying a 9×13 inch baking dish generously with cooking spray. Set it aside. Place your popped popcorn in the largest mixing bowl you own. Pick through it carefully and remove any unpopped kernels
- In a large saucepan over medium heat, melt the butter completely. Once melted, add the mini marshmallows. Stir constantly until the mixture becomes completely smooth with no lumps remaining, about 3 to 5 minutes
- Remove the saucepan from heat immediately once smooth. Quickly stir in the vanilla extract and salt
- Pour the hot marshmallow mixture over your popcorn. Work quickly to gently fold everything together until every piece of popcorn is coated
- Add the M&Ms and chocolate chips, reserving a handful for decoration. Fold gently to avoid melting the candies
- Transfer the mixture to your prepared baking dish. Press down firmly and evenly, then press the reserved candies into the top
- Allow the popcorn cake to cool completely at room temperature, about 30 minutes. Cut into squares or rectangles using a sharp knife
Notes
Always spray your hands, spatula, and cutting knife with cooking spray to prevent sticking.
Work quickly once you pour the marshmallow mixture over the popcorn as it sets as it cools.
Remove unpopped kernels to avoid surprises when eating.
