This pineapple cheesecake recipe tropical delight in every bite combines everything wonderful about classic cheesecake with the bright, sunny flavors of fresh pineapple. It's incredibly creamy with a perfect balance of sweet and tangy, and the graham cracker crust adds just the right amount of crunch.
Ingredients
2 cups Graham cracker crumbs
6 tablespoons Melted butter
2 tablespoons Sugar (for crust)
32 oz Cream cheese, softened
1 cup Granulated sugar
4 Large eggs
1 cup Sour cream
2 teaspoons Vanilla extract
1 cup Crushed pineapple, drained
1½ cups Fresh pineapple chunks
½ cup Coconut flakes (optional)
¼ cup Pineapple juice
1 tablespoon Cornstarch
Instructions
- Step 1: Preheat your oven to 325°F. Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar in a bowl. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool completely
- Step 2: Beat the softened cream cheese in a large bowl until completely smooth and fluffy. Gradually add 1 cup sugar while continuing to beat. Add eggs one at a time, mixing well after each additio
- Step 3: Fold in sour cream, vanilla extract, and the drained crushed pineapple gently. Pour this creamy filling over your cooled crust evenly
- Step 4: Bake for 55-65 minutes. The center should still jiggle slightly when you gently shake the pan. Turn off the oven and crack the door open, allowing the cheesecake to cool inside for one hour
- Step 5: Remove from oven and cool completely at room temperature. Then refrigerate for at least 6 hours, though overnight is better
- Step 6: For the topping, combine pineapple juice and cornstarch in a small saucepan. Add fresh pineapple chunks and cook over medium heat until the mixture thickens. Cool completely before spreading over your chilled cheesecake
Notes
Always use room temperature cream cheese to avoid lumps.
Drain the crushed pineapple thoroughly to prevent excess moisture.
Wrap the outside of your springform pan with aluminum foil to prevent butter leakage.
