2 cups Sharp cheddar cheese, shredded
8 oz Cream cheese, softened
4 oz jar Diced pimentos, drained
1/4 cup Mayonnaise
1 package Puff pastry sheets (2 sheets), thawed
1/2 tsp Garlic powder (optional)
1/4 tsp Cayenne pepper (adjust to taste)
Instructions
- Step 1: Prepare the Pimento Cheese Filling by combining the softened cream cheese, shredded cheddar, mayonnaise, drained pimentos, garlic powder, and cayenne in a medium bowl until well blended
- Step 2: Preheat your oven to 400°F and line two baking sheets with parchment paper. Unfold the thawed puff pastry sheets onto a lightly floured surface and roll each sheet to smooth out the creases
- Step 3: Spread half the pimento cheese mixture evenly over one pastry sheet, leaving a small border around the edges. Place the second pastry sheet on top and press down gently to seal. Cut into 24 squares
- Step 4: Arrange the squares on your prepared baking sheets and bake for 15-18 minutes until golden brown and puffed
- Step 5: Let the bites cool for 5 minutes before serving
Notes
Keep everything cold to ensure the puff pastry puffs properly.
Don't overfill the pastry to prevent leaks during baking.
Seal the edges with a fork to keep the filling from escaping.
