Description
This Mexican white trash casserole combines everything we lovemelted cheese, seasoned ground beef, crunchy chips, and just enough spice to make everyone at the table smile. It's simple, filling, and made with love.
Ingredients
1 pound Ground beef
1 packet Taco seasoning
1 can (10.5 ounces) Cream of mushroom soup
1 can (10.5 ounces) Cream of chicken soup
1 can (10 ounces) Diced tomatoes with green chilies
1 cup Sour cream
3 cups Shredded cheddar cheese, divided
1 large bag (9–10 ounces) Corn chips
1 tablespoon Olive oil
Salt and pepper to taste
Instructions
- Step 1: Preheat your oven to 350°F. Grease a 9×13-inch baking dish
- Step 2: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles
- Step 3: Stir in the taco seasoning with the cooked beef. Add a splash of water and let it simmer
- Step 4: In a large mixing bowl, combine both cream soups, diced tomatoes, sour cream, and 2 cups of shredded cheese. Mix until well blended
- Step 5: Add the seasoned ground beef to the creamy mixture and stir until combined. Adjust seasoning with salt and pepper
- Step 6: Spread half of the corn chips across the bottom of the baking dish
- Step 7: Pour the beef and cheese mixture over the corn chips and spread evenly
- Step 8: Top with the remaining 1 cup of shredded cheese
- Step 9: Crush the remaining corn chips slightly and scatter them over the cheese layer
- Step 10: Bake for 25-30 minutes until the casserole bubbles and the cheese melts completely
