This Mediterranean chicken gyro easy 30 min dinner is a quick and satisfying meal that combines marinated chicken, fresh vegetables, and creamy tzatziki, perfect for busy weeknights.
Ingredients
1.5 lbs Boneless, skinless chicken breasts, sliced thi
3 tablespoons Olive oil, divided
2 tablespoons Fresh lemon juice
4 cloves Garlic, minced
2 teaspoons Dried oregano
1 teaspoon Ground cumi
1 teaspoon Paprika
Salt and black pepper, to taste
1 cup Greek yogurt (for tzatziki)
1/2 cup Cucumber, grated
2 tablespoons Fresh dill, chopped
4–6 rounds Pita bread
2 medium Tomatoes, diced
1/2 medium Red onion, thinly sliced
2 cups Romaine lettuce, shredded
Instructions
- Step 1: Prepare the Chicken Marinade. In a medium bowl, combine 2 tablespoons olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Whisk everything together until well blended. Add your sliced chicken to the bowl and toss until every piece gets coated. Let this sit for 15 minutes while you prep everything else
- Step 2: Make the Tzatziki Sauce. While the chicken marinates, grate your cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels. Mix the grated cucumber with Greek yogurt, remaining minced garlic, fresh dill, a drizzle of olive oil, salt, and pepper. Set aside in the refrigerator
- Step 3: Cook the Chicken. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer. Cook for about 4-5 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F. Remove from heat and let rest briefly
- Step 4: Warm the Pita Bread. Quickly warm your pita bread in a dry skillet or wrapped in foil in a warm ove
- Step 5: Assemble Your Gyros. Spread tzatziki on each pita, layer on the cooked chicken, followed by tomatoes, red onion, and lettuce. Fold and enjoy immediately
