1 1/2 cups Powdered sugar (for coating)


Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper
  2. In a large mixing bowl, beat the softened butter and cream cheese together until light and fluffy, about 3 minutes
  3. Add the 1/2 cup powdered sugar and beat until well combined
  4. Mix in the lemon zest, lemon juice, and vanilla extract
  5. In a separate bowl, whisk together the flour and salt
  6. Gradually add the dry ingredients to the wet mixture, beating on low speed until just combined
  7. Using a small cookie scoop or tablespoon, portion the dough into 1-inch balls and roll each portion between your palms to create smooth spheres
  8. Place them on the prepared baking sheets, spacing them about 2 inches apart
  9. Bake for 12-14 minutes until the bottoms are lightly golden but the tops remain pale
  10. Let the cookies cool on the baking sheet for 5 minutes, then roll each one in powdered sugar until completely coated
  11. Allow the cookies to cool completely on a wire rack and roll them in powdered sugar a second time
