½ cup All-purpose flour
¾ cup Grated Romano cheese, divided
¼ cup Fresh lemon juice (about 2 lemons)
1 tablespoon Lemon zest
1 cup Chicken broth
½ cup Heavy cream
4 cloves Garlic, minced
3 tablespoons Olive oil
2 tablespoons Butter
1 teaspoon Salt
½ teaspoon Black pepper
2 tablespoons Fresh parsley, chopped
2 tablespoons Capers (optional)


Instructions

  1. Pound the chicken breasts to even thickness, about ½ inch. Season both sides generously with salt and pepper
  2. In a shallow dish, mix flour with ½ cup Romano cheese. Dredge each chicken breast in this mixture, coating both sides completely. Shake off excess flour
  3. Heat olive oil and butter in a large skillet over medium-high heat. Once the butter stops foaming, add the chicken. Cook for 5-6 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F. Remove chicken and set aside
  4. In the same skillet, add minced garlic. Sauté for 30 seconds until fragrant, being careful not to burn it
  5. Pour in chicken broth and lemon juice. Scrape up any brown bits from the bottom of the pan. Let the mixture simmer for 3-4 minutes
  6. Reduce heat to medium-low. Stir in heavy cream and lemon zest. Add the remaining ¼ cup Romano cheese, whisking until the sauce becomes smooth and creamy. If using capers, add them now
  7. Return the chicken to the skillet, spooning sauce over each piece. Simmer for 2-3 minutes to heat through and let the flavors meld
  8. Garnish with fresh parsley and serve immediately
