2 teaspoons Baking soda
2 teaspoons Ground ginger
1½ teaspoons Ground cinnamo

½ teaspoon Salt
½ cup Unsalted butter, softened
¾ cup Granulated sugar
2 Large eggs
1 cup Molasses
1 cup Buttermilk
½ cup Hot water
1 cup Unsalted butter, softened (for frosting)
8 ounces Cream cheese, softened
4 cups Powdered sugar
3 tablespoons Molasses (for frosting)
1 teaspoon Ground cinnamon (for frosting)
1 teaspoon Vanilla extract
23 tablespoons Heavy cream


Instructions

  1. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a large bowl
  3. In another bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Pour in the molasses and mix until fully combined
  4. Add the dry ingredients to the wet ingredients in three additions, alternating with the buttermilk. Mix just until combined after each addition. Stir in the hot water
  5. Divide the batter evenly between your prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely
  6. Prepare the frosting by beating the butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar, one cup at a time. Mix in the molasses, cinnamon, and vanilla. Add heavy cream until you reach your desired consistency
  7. Once the cakes are completely cool, place one layer on your serving plate. Spread a generous amount of frosting on top. Add the second layer and frost the top and sides
