These easy mint chocolate chip snowball cookies are tender, buttery, and coated in powdered sugar, resembling tiny snowballs. They combine the classic flavors of mint and chocolate, making them a perfect holiday treat.
Ingredients
2 cups All-purpose flour
1 cup Unsalted butter, softened
1 cup Powdered sugar, plus extra for coating
1 teaspoon Vanilla extract
½ teaspoon Peppermint extract
¼ teaspoon Salt
¾ cup Mini chocolate chips
½ cup Finely chopped pecans or walnuts (optional)
Instructions
- Step 1: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper
- Step 2: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy
- Step 3: Add the vanilla extract and peppermint extract to the butter mixture and beat well to combine
- Step 4: In a separate bowl, whisk together the flour and salt. Gradually add this to the butter mixture, mixing on low speed until just combined
- Step 5: Gently fold in the mini chocolate chips and nuts (if using) with a spatula
- Step 6: Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets
- Step 7: Bake for 12-14 minutes until set but not browned
- Step 8: Let the cookies cool on the baking sheet for 5 minutes before rolling in powdered sugar
- Step 9: Once completely cooled, roll them again in powdered sugar for a thicker coating
