These easy 15 min no bake Christmas mini cheesecakes are a delightful holiday treat that require no oven time and can be customized with various toppings. Perfect for parties and gatherings, they are quick to prepare and can be made ahead of time.
Ingredients
1½ cups Graham cracker crumbs
5 tablespoons Unsalted butter, melted
3 tablespoons Granulated sugar
16 ounces Cream cheese, softened
¾ cup Powdered sugar
2 teaspoons Vanilla extract
1 cup Heavy whipping cream
Holiday toppings (cranberries, sprinkles, etc.) as desired
Instructions
- Line a 12-cup muffin tin with paper liners
- Combine graham cracker crumbs, melted butter, and granulated sugar in a medium bowl. Mix until the texture resembles wet sand
- Spoon about two tablespoons of the mixture into each liner and press down firmly
- Beat the softened cream cheese in a large bowl with an electric mixer until smooth and fluffy
- Add powdered sugar and vanilla extract, then beat until completely combined
- In a separate bowl, whip the heavy cream until stiff peaks form
- Gently fold the whipped cream into the cream cheese mixture
- Spoon or pipe the filling over each crust, filling to just below the rim of each liner
- Add your festive toppings while the filling is still soft
- Refrigerate for at least two hours before serving
Notes
For best results, chill the crusts for ten minutes before adding filling.
Use full-fat cream cheese for the best texture.
