This crockpot hamburger potato casserole easy dinner is a comforting and budget-friendly meal that requires minimal prep and delivers maximum flavor. Perfect for busy families, it combines ground beef, potatoes, and pantry staples into a hearty dish that kids love.
Ingredients
2 pounds Ground beef (80/20 or 85/15)
6 medium Russet potatoes, thinly sliced
1 large Yellow onion, diced
2 cans (10.5 oz each) Cream of mushroom soup
1 cup Sour cream
2 cups Shredded cheddar cheese
1/2 cup Beef broth
1 teaspoon Garlic powder
1 teaspoon Paprika
1 teaspoon Salt
1/2 teaspoon Black pepper
Fresh parsley for garnish (Optional)
Instructions
- Step 1: Brown the ground beef in a large skillet over medium-high heat for 7-8 minutes. Drain excess fat and season with salt, pepper, garlic powder, and paprika
- Step 2: Wash and thinly slice the potatoes, patting them dry with paper towels
- Step 3: In a medium bowl, combine cream of mushroom soup, sour cream, and beef broth. Whisk until smooth
- Step 4: Spray the slow cooker with non-stick cooking spray. Layer one-third of the potato slices, half of the cooked beef, diced onions, and one-third of the cheese. Pour one-third of the soup mixture over this layer
- Step 5: Repeat the layering process with another third of potatoes, remaining beef, more onions, another third of cheese, and another third of soup mixture. Finish with the final layer of potatoes, remaining soup mixture, and top with the last of the cheese
- Step 6: Cover and cook on low for 6-7 hours or on high for 3-4 hours until potatoes are fork-tender
- Step 7: Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley if desired
Notes
For a creamier texture, add an extra half cup of sour cream.
You can substitute ground turkey or chicken for a lighter version.
