Description

This creamy strawberry crunch cheesecake recipe delivers a delightful combination of velvety cheesecake, fresh strawberry flavor, and a crunchy topping, making it a perfect dessert for celebrations.

2 cups Graham cracker crumbs
6 tablespoons Melted butter
32 oz Cream cheese, softened
1 cup Granulated sugar
1 cup Sour cream
4 Large eggs
2 teaspoons Vanilla extract
1 ½ cups Fresh strawberries, diced
½ cup Strawberry preserves
1 package (14.3 oz) Golden Oreos, crushed
1 cup Strawberry cake mix (dry)
½ cup Melted butter (for topping)
1 cup Heavy whipping cream
¼ cup Powdered sugar


Instructions

  1. Step 1: Preheat your oven to 325°F and wrap the outside of a 9-inch springform pan with aluminum foil
  2. Step 2: Combine graham cracker crumbs with 6 tablespoons melted butter and press into the bottom of the prepared pan. Bake for 10 minutes and cool completely
  3. Step 3: Beat softened cream cheese until smooth, about 3 minutes
  4. Step 4: Mix in sugar, then add sour cream and vanilla extract, beating until smooth
  5. Step 5: Add eggs one at a time, mixing on low speed after each additio
  6. Step 6: Fold in diced strawberries and strawberry preserves
  7. Step 7: Pour filling over the cooled crust and prepare a water bath by placing the springform pan in a larger roasting pan with hot water halfway up the sides
  8. Step 8: Bake for 70-80 minutes until edges are set and center jiggles slightly
  9. Step 9: Turn off the oven, crack the door, and let the cheesecake cool inside for one hour
  10. Step 10: Crush Golden Oreos and mix with dry strawberry cake mix and ½ cup melted butter. Bake at 350°F for 15 minutes, stirring halfway through, and cool completely
  11. Step 11: Refrigerate the cheesecake for at least 8 hours
  12. Step 12: Whip heavy cream with powdered sugar until stiff peaks form, spread over cheesecake, and sprinkle with crunch topping
