Description
This creamy green chile chicken enchilada soup combines everything we love about traditional chicken enchiladas into one pot of pure comfort. It's easy to make, ready in about 30 minutes, and delivers bold, satisfying flavors without the fuss of rolling individual enchiladas.
Ingredients
3 cups Cooked chicken breast (shredded or diced)
2 tablespoons Olive oil or butter
1 medium Yellow onion (diced)
4 Garlic cloves (minced)
2 cans Diced green chiles (4-ounce cans)
4 cups Chicken broth
8 ounces Cream cheese (softened)
1 cup Heavy cream or half-and-half
1 tablespoon Ground cumi
1 teaspoon Chili powder
2 cups Shredded Monterey Jack cheese
1 cup Frozen corn kernels
1 can Black beans (drained and rinsed, 15 ounces)
Salt and pepper To taste
Optional Fresh cilantro (chopped, for garnish)
Instructions
- Step 1: Heat the olive oil or butter in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes soft and translucent
- Step 2: Add the minced garlic and cook for another minute, stirring constantly to prevent burning
- Step 3: Stir in the diced green chiles, cumin, and chili powder. Let these spices bloom in the oil for about 30 seconds
- Step 4: Pour in the chicken broth and bring the mixture to a gentle simmer. Add the shredded chicken, corn, and black beans. Stir everything together and let it simmer for about 10 minutes
- Step 5: Reduce the heat to low. Cut the softened cream cheese into small cubes and add them to the pot. Stir continuously until the cream cheese melts completely
- Step 6: Pour in the heavy cream and add the shredded Monterey Jack cheese. Stir until the cheese melts and the soup becomes creamy and smooth. Season with salt and pepper to taste
- Step 7: Let the soup simmer on low for another 5 minutes to let all the flavors meld together. Taste and adjust seasonings as needed
- Step 8: Ladle into bowls and garnish with your favorite toppings
Notes
Always use softened cream cheese for a smooth texture.
Don't let the soup boil after adding dairy ingredients to prevent separation.
