Description

Ingredients
1 pound Penne pasta
1 cup Dried cranberries
1 cup Mayonnaise
1/2 cup Sour cream
2 tablespoons Apple cider vinegar
2 tablespoons Sugar
1 teaspoon Salt
1/2 teaspoon Black pepper
2 stalks Celery, diced
1/4 cup Red onion, finely chopped
1/2 cup Feta cheese, crumbled
1/2 cup Chopped pecans or walnuts
1/4 cup Fresh parsley, chopped
Instructions
- Cook the penne pasta according to package directions in salted boiling water until al dente. Drain and rinse under cold water
- In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper to make the dressing
- Add the cooled penne pasta to the dressing and toss until evenly coated
- Fold in dried cranberries, diced celery, chopped red onion, crumbled feta cheese, and nuts. Mix gently
- Cover and refrigerate for at least one hour before serving. Sprinkle with fresh parsley before serving
Notes
For a lighter version, substitute Greek yogurt for half the mayonnaise.
You can customize the salad by adding cooked chicken, turkey, or ham for a heartier meal.
