Description

This cranberry penne salad combines sweet and tangy flavors with a creamy dressing, making it a perfect dish for potlucks, picnics, and family gatherings. It's easy to prepare and offers a delightful contrast of textures.


Ingredients

1 pound Penne pasta
1 cup Dried cranberries
1 cup Mayonnaise
1/2 cup Sour cream
2 tablespoons Apple cider vinegar
2 tablespoons Sugar
1 teaspoon Salt
1/2 teaspoon Black pepper
2 stalks Celery, diced
1/4 cup Red onion, finely chopped
1/2 cup Feta cheese, crumbled
1/2 cup Chopped pecans or walnuts
1/4 cup Fresh parsley, chopped


Instructions

  1. Cook the penne pasta according to package directions in salted boiling water until al dente. Drain and rinse under cold water
  2. In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper to make the dressing
  3. Add the cooled penne pasta to the dressing and toss until evenly coated
  4. Fold in dried cranberries, diced celery, chopped red onion, crumbled feta cheese, and nuts. Mix gently
  5. Cover and refrigerate for at least one hour before serving. Sprinkle with fresh parsley before serving

Notes

For a lighter version, substitute Greek yogurt for half the mayonnaise.

You can customize the salad by adding cooked chicken, turkey, or ham for a heartier meal.
