Ingredients
1 cup Cottage cheese (full-fat or low-fat)
1 cup Pumpkin puree (not pumpkin pie filling)
1½ cups All-purpose flour
¾ cup Granulated sugar
2 large Eggs
¼ cup Melted butter or coconut oil
1½ teaspoons Baking powder
½ teaspoon Baking soda
1½ teaspoons Ground cinnamo
½ teaspoon Ground ginger
¼ teaspoon Ground nutmeg
¼ teaspoon Salt
1 teaspoon Vanilla extract
Instructions
- Step 1: Preheat your oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper
- Step 2: In a large mixing bowl, whisk together the cottage cheese, pumpkin puree, eggs, melted butter, and vanilla extract until mostly smooth
- Step 3: In a separate bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Whisk these dry ingredients together thoroughly
- Step 4: Pour the dry ingredients into the wet ingredients. Stir gently until just combined
- Step 5: Pour the batter into your prepared pan and spread it evenly
- Step 6: Bake for 25-30 minutes until a toothpick inserted in the center comes out with a few moist crumbs
- Step 7: Let the bars cool completely in the pan before cutting
