Description
This churro cheesecake recipe dessert for parties combines the crispy, cinnamon-sugar magic of churros with the creamy richness of cheesecake, making it the ultimate crowd-pleaser for any celebration.
Ingredients
2 cups Graham cracker crumbs
1/2 cup Melted butter
3 tablespoons Granulated sugar (for crust)
32 oz Cream cheese (softened)
1 cup Granulated sugar (for filling)
1 cup Sour cream
4 Large eggs
2 teaspoons Vanilla extract
1 tablespoon Ground cinnamon (for filling)
1/2 cup Granulated sugar (for topping)
2 tablespoons Ground cinnamon (for topping)
1/4 cup Melted butter (for topping)
Instructions
- Preheat your oven to 325°F and prepare a 9-inch springform pan by wrapping the outside with aluminum foil
- Mix the graham cracker crumbs, melted butter, and 3 tablespoons of sugar in a medium bowl. Press this mixture firmly into the bottom of your prepared pan. Bake for 10 minutes, then set aside to cool
- Beat the softened cream cheese in a large bowl until smooth and fluffy, about 3 minutes. Gradually add 1 cup of sugar, beating until well combined. Mix in the sour cream, followed by the eggs one at a time. Add the vanilla extract and 1 tablespoon of cinnamon, mixing just until incorporated
- Pour the filling over the cooled crust. Place the springform pan in a larger roasting pan, then carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pa
- Bake for 60-70 minutes. The center should still jiggle slightly when you gently shake the pan. Turn off the oven, crack the door open, and let the cheesecake cool inside for one hour
- Once cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, mix the remaining 1/2 cup sugar with 2 tablespoons of cinnamon. Brush the top of the cheesecake with melted butter, then sprinkle with the cinnamon-sugar mixture
Notes
For a lighter version, consider using reduced-fat cream cheese.
