2 cups Graham cracker crumbs
1/2 cup Melted butter
3 tablespoons Granulated sugar (for crust)
32 oz Cream cheese (softened)
1 cup Granulated sugar (for filling)
1 cup Sour cream
4 Large eggs
2 teaspoons Vanilla extract
1 tablespoon Ground cinnamon (for filling)
1/2 cup Granulated sugar (for topping)
2 tablespoons Ground cinnamon (for topping)
1/4 cup Melted butter (for topping)


Instructions

  1. Preheat your oven to 325°F and prepare a 9-inch springform pan by wrapping the outside with aluminum foil
  2. Mix the graham cracker crumbs, melted butter, and 3 tablespoons of sugar in a medium bowl. Press this mixture firmly into the bottom of your prepared pan. Bake for 10 minutes, then set aside to cool
  3. Beat the softened cream cheese in a large bowl until smooth and fluffy, about 3 minutes. Gradually add 1 cup of sugar, beating until well combined. Mix in the sour cream, followed by the eggs one at a time. Add the vanilla extract and 1 tablespoon of cinnamon, mixing just until incorporated
  4. Pour the filling over the cooled crust. Place the springform pan in a larger roasting pan, then carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pa
  5. Bake for 60-70 minutes. The center should still jiggle slightly when you gently shake the pan. Turn off the oven, crack the door open, and let the cheesecake cool inside for one hour
  6. Once cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, mix the remaining 1/2 cup sugar with 2 tablespoons of cinnamon. Brush the top of the cheesecake with melted butter, then sprinkle with the cinnamon-sugar mixture

Notes

For a lighter version, consider using reduced-fat cream cheese.
