1.5 pounds Boneless, skinless chicken breasts, cut into bite-sized pieces
3 tablespoons Butter, divided
8 ounces Mushrooms, sliced
1 medium Onion, finely diced
3 cloves Garlic, minced
2 tablespoons All-purpose flour
1.5 cups Chicken broth
1 cup Sour cream
1 tablespoon Dijon mustard
1 teaspoon Paprika
Salt and black pepper, to taste
2 tablespoons Fresh parsley, chopped (optional)


Instructions

  1. Step 1: Season the chicken pieces generously with salt, pepper, and paprika. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Once the butter melts and sizzles, add the chicken in a single layer. Cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken to a plate and set aside
  2. Step 2: In the same skillet, add the remaining tablespoon of butter. Toss in the sliced mushrooms and diced onion. Sauté for about 5 minutes until the mushrooms release their moisture and the onions turn translucent
  3. Step 3: Add the minced garlic and cook for 30 seconds until fragrant. Sprinkle the flour over the vegetables and stir constantly for about 1 minute
  4. Step 4: Slowly pour in the chicken broth while stirring continuously. Bring the mixture to a gentle simmer and cook for 3-4 minutes until the sauce thickens slightly
  5. Step 5: Reduce the heat to low. Stir in the Dijon mustard, then add the sour cream. Mix thoroughly until smooth and creamy. Return the cooked chicken to the skillet and stir everything together. Let it simmer gently for 2-3 minutes to heat through
  6. Step 6: Taste and adjust seasoning with additional salt and pepper as needed. Garnish with fresh chopped parsley if desired

Notes

For a dairy-free version, use coconut cream instead of sour cream.

To prevent curdling, ensure sour cream is at room temperature before adding.
