Ingredients
2 pounds Ground chicke
½ cup Almond flour
1 cup Grated zucchini (squeezed dry)
4 ounces Cream cheese (softened)
2 Large eggs
½ cup Parmesan cheese (grated)
3 cloves Garlic (minced)
1 teaspoon Onion powder
1 tablespoon Italian seasoning
1 teaspoon Salt
½ teaspoon Black pepper
½ cup Sugar-free ketchup (for topping)
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease a loaf pa
- Squeeze all excess moisture from your grated zucchini
- Combine all ingredients except the ketchup in a large bowl and mix until just combined
- Shape the mixture into a loaf and transfer it to your prepared baking sheet
- Spread the sugar-free ketchup evenly over the top
- Bake for 45-50 minutes until the internal temperature reaches 165°F
- Let the meatloaf rest for 10 minutes before slicing
