Description

3 cups Cooked chicken breast, diced
3 cups Fresh or frozen broccoli florets
1½ cups Long-grain white rice, uncooked
2 cans (10.5 oz each) Cream of chicken soup
2 cups Chicken broth
1 cup Sour cream
2 cups Shredded cheddar cheese, divided
1 teaspoon Garlic powder
1 teaspoon Onion powder
½ teaspoon Salt
½ teaspoon Black pepper
2 tablespoons Butter


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or cooking spray
  2. Prepare your broccoli by cutting it into bite-sized florets if using fresh, or break up any large clumps if using froze
  3. In a large mixing bowl, combine the uncooked rice, cream of chicken soup, chicken broth, sour cream, and one cup of shredded cheese. Add garlic powder, onion powder, salt, and pepper, and stir until well mixed
  4. Fold in the diced chicken and broccoli florets, then pour the mixture into the prepared baking dish and spread it evenly
  5. Dot the top with small pieces of butter, cover the dish tightly with aluminum foil, and bake for 60 minutes
  6. Remove the foil, sprinkle the remaining cup of cheese over the top, and return the dish to the oven for an additional 10-15 minutes until the cheese melts and turns golde
  7. Let the casserole rest for 5-10 minutes before serving

Notes

For a vegetarian version, omit the chicken and add more vegetables like mushrooms or cauliflower.

You can use rotisserie chicken for a quicker option.
