Description

This cheesy fajita chicken casserole combines everything you adore about classic fajitas without the messy assembly. It's incredibly simple to prepare and delivers bold, restaurant-quality flavor right from your own oven. The tender chicken mingles with sweet bell peppers and onions, all coated in warm Mexican spices, topped with gooey cheese for an irresistible golden crust.


Ingredients

1.5 pounds Boneless, skinless chicken breasts
3 medium Bell peppers (mixed colors)
1 large Yellow onio
2 tablespoons Olive oil
2 teaspoons Chili powder
1 teaspoon Cumi
1 teaspoon Garlic powder
1 teaspoon Paprika
1 teaspoon Salt
½ teaspoon Black pepper
2 cups Cooked rice
1 can (15 oz) Black beans (drained)
1 cup Salsa
½ cup Sour cream
2 cups Shredded Mexican cheese blend
Fresh cilantro (optional) for garnish


Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter
  2. Step 2: Cut your chicken breasts into bite-sized pieces and season them with half of your spice mixture
  3. Step 3: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until golden brow
  4. Step 4: In the same skillet, add your sliced bell peppers and onions. Sauté until they begin to softe
  5. Step 5: Add the sautéed vegetables to the bowl with the chicken. Stir in the cooked rice, black beans, salsa, and sour cream
  6. Step 6: Transfer the mixture to your prepared baking dish and sprinkle the shredded cheese over the top
  7. Step 7: Cover the dish with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes
  8. Step 8: Let the casserole rest for 5 minutes before serving. Garnish with fresh cilantro if desired

Notes

Use day-old rice for better texture.

Drain vegetables well to avoid excess moisture.
