Description

This cheesy chicken and spinach casserole is a comforting dish packed with tender chicken, vibrant spinach, and layers of melted cheese. It's easy to prepare, a complete meal in one dish, and perfect for meal prep.


Ingredients

2 pounds Boneless, skinless chicken breasts, cooked and diced
4 cups Fresh spinach, roughly chopped
8 ounces Cream cheese, softened
1 cup Sour cream
2 cups Shredded mozzarella cheese, divided
1 cup Shredded cheddar cheese
3 cloves Garlic, minced
1 teaspoon Onion powder
1 tablespoon Italian seasoning
1 teaspoon Salt
½ teaspoon Black pepper
½ cup Chicken broth
½ cup Panko breadcrumbs (optional, for topping)


Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray
  2. Step 2: In a large mixing bowl, combine the softened cream cheese, sour cream, chicken broth, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until smooth and creamy
  3. Step 3: Add the cooked chicken, chopped spinach, 1 cup of mozzarella, and all the cheddar cheese to the bowl. Stir everything together until well combined
  4. Step 4: Transfer the mixture to your prepared baking dish. Spread it evenly across the bottom
  5. Step 5: Sprinkle the remaining mozzarella cheese over the top. If using breadcrumbs, mix them with a tablespoon of melted butter and sprinkle over the cheese layer
  6. Step 6: Bake for 25-30 minutes, until the casserole is hot and bubbly and the cheese turns golden brow
  7. Step 7: Let the casserole rest for 5-10 minutes before serving

Notes

Use rotisserie chicken to save time.

If using frozen spinach, ensure it is thawed and excess moisture is squeezed out.
