These blueberry breakfast quesadillas are a quick and easy breakfast option that combines sweet and creamy flavors in a crispy, golden tortilla. Perfect for busy mornings, they are nutritious and delicious, making them a family favorite.
Ingredients
4 Flour tortillas (8-inch)
4 ounces Cream cheese, softened
1 cup Fresh blueberries
2 tablespoons Honey
2 tablespoons Butter
Powdered sugar (optional) for dusting
Instructions
- Soften the cream cheese to room temperature and mix it with one tablespoon of honey until smooth
- Spread the cream cheese mixture evenly over two tortillas, using about 2 ounces per tortilla
- Scatter half the blueberries over each cream cheese-covered tortilla and drizzle with the remaining honey
- Top each with another tortilla and press down gently to seal
- Heat a large skillet over medium heat and add one tablespoon of butter
- Place one quesadilla in the skillet and cook for 2-3 minutes until golden brown and crispy
- Flip carefully and cook the other side for another 2-3 minutes
- Remove to a cutting board, repeat with the remaining butter and second quesadilla, then cut each into quarters and dust with powdered sugar if desired
Notes
Use softened cream cheese to avoid tearing the tortillas.
Don't overload the quesadillas with blueberries to prevent difficulty in flipping.
Control the heat to achieve a crispy exterior without burning.
