Ingredients

2 cups Granulated sugar
1 tablespoon Baking powder
1 teaspoon Salt
1 cup Unsalted butter (room temperature)
4 Large eggs
1 cup Buttermilk
1/2 cup Whole milk
2 teaspoons Pure vanilla extract
1 1/2 cups Unsalted butter (for frosting, room temperature)
6 cups Powdered sugar
1/4 cup Heavy cream
1 tablespoon Pure vanilla extract (for frosting)
Pinch Salt (for frosting)


Instructions

  1. Preheat your oven to 350°F. Grease and flour three 9-inch round cake pans
  2. In a large bowl, whisk together flour, baking powder, and salt. Set aside
  3. Cream the butter and sugar together until light and fluffy
  4. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract
  5. Combine the buttermilk and whole milk. Alternately add the dry ingredients and milk mixture to the butter mixture, mixing until just combined
  6. Divide the batter evenly among the prepared pans
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pans for ten minutes before transferring to wire racks
  8. Make the frosting by beating the butter until creamy, then gradually adding powdered sugar, heavy cream, vanilla, and salt. Beat until light and fluffy
  9. Once the cakes are cool, level the tops if needed. Layer with frosting between each cake layer and apply a crumb coat
  10. Refrigerate for 20 minutes, then apply the final coat of frosting and decorate as desired

Notes

For a chocolate version, replace one cup of flour with unsweetened cocoa powder.

If you don't have buttermilk, add one tablespoon of lemon juice or white vinegar to regular milk.
