Ingredients
3 cups All-purpose flour
2 cups Granulated sugar
1 tablespoon Baking powder
1 teaspoon Salt
1 cup Unsalted butter (room temperature)
4 Large eggs
1 cup Buttermilk
1/2 cup Whole milk
2 teaspoons Pure vanilla extract
1 1/2 cups Unsalted butter (for frosting, room temperature)
6 cups Powdered sugar
1/4 cup Heavy cream
1 tablespoon Pure vanilla extract (for frosting)
Pinch Salt (for frosting)
Instructions
- Preheat your oven to 350°F. Grease and flour three 9-inch round cake pans
- In a large bowl, whisk together flour, baking powder, and salt. Set aside
- Cream the butter and sugar together until light and fluffy
- Add eggs one at a time, beating well after each addition. Mix in the vanilla extract
- Combine the buttermilk and whole milk. Alternately add the dry ingredients and milk mixture to the butter mixture, mixing until just combined
- Divide the batter evenly among the prepared pans
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pans for ten minutes before transferring to wire racks
- Make the frosting by beating the butter until creamy, then gradually adding powdered sugar, heavy cream, vanilla, and salt. Beat until light and fluffy
- Once the cakes are cool, level the tops if needed. Layer with frosting between each cake layer and apply a crumb coat
- Refrigerate for 20 minutes, then apply the final coat of frosting and decorate as desired
Notes
For a chocolate version, replace one cup of flour with unsweetened cocoa powder.
If you don't have buttermilk, add one tablespoon of lemon juice or white vinegar to regular milk.
