Ingredients
1 pound Fresh lump crab meat
2 large Ripe avocados
3 tablespoons Fresh lemon juice
2 tablespoons Extra virgin olive oil
1 teaspoon Dijon mustard
2 tablespoons Fresh dill, chopped
1 tablespoon Fresh chives, chopped
Salt to taste
Black pepper to taste
4 cups Mixed greens (optional)
Instructions
- Step 1: Carefully pick through the crab meat to remove any shells or cartilage. Place the crab in a large mixing bowl and set aside
- Step 2: Cut the avocados in half, remove the pits, and scoop out the flesh. Dice into bite-sized cubes and toss with one tablespoon of lemon juice
- Step 3: In a small bowl, whisk together the remaining lemon juice, olive oil, Dijon mustard, salt, and pepper
- Step 4: Add the diced avocado to the bowl with the crab meat. Gently fold in the chopped dill and chives
- Step 5: Drizzle the dressing over the crab and avocado salad and fold everything together gently
- Step 6: Serve immediately on a bed of mixed greens, in avocado halves, or simply on its ow
