Ingredients
1 pound Boneless, skinless chicken breasts
12 ounces Spaghetti or Asian noodles
½ cup Creamy peanut butter
¼ cup Soy sauce
3 tablespoons Rice vinegar
2 tablespoons Honey
1 tablespoon Sesame oil
1 tablespoon Fresh ginger, grated
3 cloves Garlic, minced
¼ teaspoon Red pepper flakes
1 cup Shredded carrots
1 cup Sliced bell peppers
4 stalks Green onions, chopped
¼ cup Crushed peanuts
Fresh cilantro for garnish
Instructions
- Cook the noodles according to package directions
- Cut the chicken into bite-sized pieces and season with salt and pepper
- Heat a large skillet over medium-high heat and add a tablespoon of oil. Cook the chicken pieces for about 6-7 minutes until golden and cooked through. Transfer the chicken to a plate and set aside
- In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and red pepper flakes. Add warm water, one tablespoon at a time, until the sauce reaches your desired consistency
- Drain the cooked noodles and return them to the pot. Pour the peanut sauce over the noodles and toss everything together thoroughly. Add the cooked chicken, shredded carrots, and bell peppers. Toss again until everything gets evenly coated
- Transfer the Asian peanut noodles with chicken to serving bowls. Top with green onions, crushed peanuts, and fresh cilantro. Serve immediately while warm, or chill for a delicious cold noodle salad

Don't overcook your noodles; they should be al dente.
