Ingredients
12 ounces Angel hair pasta
1 pound Large shrimp, peeled and deveined
3 tablespoons Olive oil
4 Garlic cloves, minced
28 ounces Crushed tomatoes
1 cup Cherry tomatoes, halved
1/4 cup Fresh basil, chopped
1/4 teaspoon Red pepper flakes
Salt and black pepper to taste
2 tablespoons Fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil for the angel hair pasta
- Pat the shrimp dry and season with salt and pepper
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and cook the shrimp for 2 minutes per side until pink
- Transfer the shrimp to a plate and set aside
- In the same skillet, add the remaining olive oil, garlic, and red pepper flakes, cooking until fragrant
- Add crushed tomatoes and cherry tomatoes, season with salt and pepper, and let simmer for 10 minutes
- Cook the angel hair pasta according to package directions, reserving 1/2 cup of pasta water before draining
- Return the shrimp to the skillet, add fresh basil, and toss gently
- Add the drained angel hair pasta to the skillet, tossing everything together and adding reserved pasta water as needed
