Description

Ingredients

12 ounces Angel hair pasta
1 pound Large shrimp, peeled and deveined
3 tablespoons Olive oil
4 Garlic cloves, minced
28 ounces Crushed tomatoes
1 cup Cherry tomatoes, halved
1/4 cup Fresh basil, chopped
1/4 teaspoon Red pepper flakes
Salt and black pepper to taste
2 tablespoons Fresh parsley, chopped


Instructions

  1. Bring a large pot of salted water to a boil for the angel hair pasta
  2. Pat the shrimp dry and season with salt and pepper
  3. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and cook the shrimp for 2 minutes per side until pink
  4. Transfer the shrimp to a plate and set aside
  5. In the same skillet, add the remaining olive oil, garlic, and red pepper flakes, cooking until fragrant
  6. Add crushed tomatoes and cherry tomatoes, season with salt and pepper, and let simmer for 10 minutes
  7. Cook the angel hair pasta according to package directions, reserving 1/2 cup of pasta water before draining
  8. Return the shrimp to the skillet, add fresh basil, and toss gently
  9. Add the drained angel hair pasta to the skillet, tossing everything together and adding reserved pasta water as needed

Notes

Use high-quality olive oil for better flavor.

Do not overcook the pasta; it should be al dente.
