Description
This angel hair with shrimp and asparagus checks all the boxes for a perfect weeknight dinner. It's incredibly quick, with dinner on the table in under 30 minutes, and features simple, fresh ingredients that let each component shine. The sweet shrimp pairs beautifully with the slightly earthy asparagus, while the angel hair pasta acts as the perfect delicate base for the garlic-butter sauce.
Ingredients
12 oz Angel hair pasta
1 lb Large shrimp, peeled and deveined
1 lb Fresh asparagus, trimmed and cut into 2-inch pieces
4–5 Garlic cloves, minced
4 tbsp Butter
2 tbsp Olive oil
2 tbsp Fresh lemon juice
1/4 cup White wine (optional)
1/4 tsp Red pepper flakes
Salt and black pepper to taste
1/4 cup Fresh parsley, chopped
1/2 cup Parmesan cheese, grated
Instructions
- Step 1: Bring a large pot of salted water to boil. Cook the angel hair pasta according to package directions, usually about 3-4 minutes. Reserve one cup of pasta water before draining
- Step 2: While the pasta cooks, heat one tablespoon of olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then cook for 2 minutes per side until pink and opaque. Remove shrimp to a plate
- Step 3: In the same skillet, add the remaining olive oil and two tablespoons of butter. Add the asparagus pieces and sauté for 4-5 minutes until tender-crisp and bright gree
- Step 4: Push the asparagus to the side and add the minced garlic and red pepper flakes. Cook for 30 seconds until fragrant, being careful not to burn the garlic
- Step 5: If using wine, pour it into the skillet and let it simmer for one minute. Add the remaining butter and lemon juice, stirring to create a light sauce
- Step 6: Return the shrimp to the skillet along with the drained pasta. Toss everything together, adding reserved pasta water as needed to create a silky coating
- Step 7: Remove from heat and stir in fresh parsley and half the Parmesan cheese. Taste and adjust seasoning as needed
Notes
Store leftover angel hair with shrimp and asparagus in an airtight container in the refrigerator for up to two days.
