Ingredients
1 pound Cooked lobster meat, chopped
2 medium Fresh jalapeños, seeded and diced
4 ounces Cream cheese, softened
1 cup Shredded Monterey Jack cheese
2 cloves Garlic, minced
2 tablespoons Fresh cilantro, chopped
1 tablespoon Lime juice
12 pieces Empanada dough discs
1 large Egg, beate
Salt and black pepper to taste
Cooking spray as needed
Instructions
- Combine the chopped lobster meat, diced jalapeños, cream cheese, Monterey Jack cheese, minced garlic, cilantro, and lime juice in a medium bowl. Season with salt and pepper to taste
- Lay out empanada dough discs on a clean work surface. Spoon about two tablespoons of the lobster filling onto the center of each disc
- Brush the edges of each disc with beaten egg. Fold the dough over to create a half-moon shape, pressing firmly to seal. Use a fork to crimp the edges
- Preheat your air fryer to 375°F for about three minutes. Lightly spray the air fryer basket with cooking spray
- Arrange the empanadas in a single layer in the basket, leaving space between each one. Brush the tops with remaining beaten egg and spray lightly with cooking spray
- Cook the empanadas for 10-12 minutes, flipping them halfway through until golden brown and crispy
