Description

Ingredients

1 pound Cooked lobster meat, chopped
2 medium Fresh jalapeños, seeded and diced
4 ounces Cream cheese, softened
1 cup Shredded Monterey Jack cheese
2 cloves Garlic, minced
2 tablespoons Fresh cilantro, chopped
1 tablespoon Lime juice
12 pieces Empanada dough discs
1 large Egg, beate
Salt and black pepper to taste
Cooking spray as needed


Instructions

  1. Combine the chopped lobster meat, diced jalapeños, cream cheese, Monterey Jack cheese, minced garlic, cilantro, and lime juice in a medium bowl. Season with salt and pepper to taste
  2. Lay out empanada dough discs on a clean work surface. Spoon about two tablespoons of the lobster filling onto the center of each disc
  3. Brush the edges of each disc with beaten egg. Fold the dough over to create a half-moon shape, pressing firmly to seal. Use a fork to crimp the edges
  4. Preheat your air fryer to 375°F for about three minutes. Lightly spray the air fryer basket with cooking spray
  5. Arrange the empanadas in a single layer in the basket, leaving space between each one. Brush the tops with remaining beaten egg and spray lightly with cooking spray
  6. Cook the empanadas for 10-12 minutes, flipping them halfway through until golden brown and crispy
