Description

This 30 minute french onion chicken orzo casserole combines the deep, savory flavors of classic French onion soup with tender chicken and creamy orzo pasta, creating a one-pan wonder that's perfect for busy weeknights.


Ingredients

1.5 pounds Boneless, skinless chicken breasts, cut into bite-sized pieces
1.5 cups Orzo pasta, uncooked
2 Large yellow onions, thinly sliced
1.5 cups Gruyère cheese, shredded
3 cups Beef broth
1/2 cup Heavy cream
3 tablespoons Butter
2 teaspoons Fresh thyme, chopped
4 Garlic cloves, minced
2 tablespoons Olive oil
Salt and black pepper, to taste
Fresh parsley, for garnish


Instructions

  1. Heat one tablespoon of olive oil and one tablespoon of butter in a large, oven-safe skillet over medium-high heat. Season chicken pieces with salt and pepper, then cook for about five minutes until golden brown. Transfer chicken to a plate
  2. Add remaining butter to the skillet. Toss in sliced onions and reduce heat to medium. Cook for about eight minutes, stirring frequently, until golden and sweet. Add minced garlic and fresh thyme, stirring for about thirty seconds until fragrant
  3. Pour in orzo, stirring to coat with the buttery onion mixture. Add beef broth and heavy cream, bringing to a simmer. Nestle chicken pieces back into the skillet and sprinkle half of the shredded Gruyère over the top. Cover with a lid or aluminum foil
  4. Let the casserole simmer gently for about twelve minutes. Preheat broiler during the last few minutes of cooking. Once orzo is tender and chicken is cooked through, remove the lid and sprinkle remaining Gruyère on top. Place under the broiler for two to three minutes until cheese bubbles and turns golden brow
  5. Remove from oven, garnish with fresh parsley, and let rest for two minutes before serving

Notes

For a quicker meal, use rotisserie chicken instead of raw chicken.
